The Leeu Collection, a prestigious group of boutique hotels in Franschhoek and internationally, is looking for a Head Chef to lead the kitchen at their flagship Franschhoek property. You'll have full creative control over a prix-fixe tasting menu that changes with the seasons and celebrates produce from the surrounding farms. This is a career-defining role for an ambitious chef ready to plant their flag in South Africa's food capital. Key responsibilities: • Full ownership of the kitchen: menu, team, costs, and standards • Develop relationships with local farmers and artisan producers • Represent the restaurant at industry events and media • Maintain a brigade of 8 and oversee seasonal menu changes Requirements: • Minimum 3 years as Head Chef or strong Senior Sous Chef ready for the step up • Passion for wine-pairing and Cape Winelands cuisine • Proven ability to manage kitchen P&L • Portfolio of original menus required with application

Pros: Creative freedom to build a world-class menu in the most beautiful valley in South Africa. Leeu Collection's commitment to excellence matches my own. The wine access for chef development is extraordinary. International transfer to London is real.
Cons: Franschhoek is small, social life is limited. The intimate scale of the property means every service is high-visibility.

Pros: Working in beautiful Franschhoek properties is genuinely uplifting. The management team respects housekeeping staff here unlike at many other properties. Staff meals are of excellent quality.
Cons: Franschhoek is small and the drive from surrounding areas can be long. Very high room preparation standards required.
